Choco-Berry-Licious!

First, you need some berries.
We got our wonderful berries at Grelen Nursery in Somerset, VA.  This is their first year featuring pick your own berries.  Cathy and Brent and Jamal were all welcoming and helpful and the berries are lovely!
Black raspberries.  Yum!
Then you need a recipe.  I found this one at the King Arthur Flour site.  This recipe is the 2010 Great Cake Contest winner. It took top honors for Sharon Kurtz of Emmaus, PA, at the Great Allentown Fair.  The King Arthur Flour Blog has step by step photos on how to make this, so I didn't include all my prep steps, just the the assembling portion.

Layer berries over mousse (I didn't think I had enough raspberries so I used some blueberries too).

Add next layer of cake, another layer of mousse... just waiting for the berries here.

Last layer on top.  Ready to be frosted.

Thin layer "Crumb coat" of frosting.  Put back into fridge for 30 minutes before adding more & piping.

The finished cake.

Close up of those delectable berries.

Happy Birthday, Erika!

Super-Beautiful helping take out the candles.

YUM!
